FOOD FROM SCRATCH

I plan my day around fitting cooking in. When my family is too rushed to eat at home, and I'm not talking about eating our for the fun of it, everything feels off-balanced and stressful. Nourishing our bodies with food is investing in our health at the most basic level.

We are not perfect, my kids love processed cereals and there are definitely boxes of mac & cheese in our pantry. My goal is to minimize the fake processed foods with nutritious foods that are full of the enzymes and bacteria our gut needs to stay healthy.

I SHARE UNPROCESSED RECIPES FROM SCRATCH THAT ARE SIMPLE YET DELICIOUS FOR CHEFS OF ALL SKILL LEVELS.

Did you know?

I learned several years ago that food in American grocery stores is basically 'dead,' meaning that it has either been modified in an unnatural way or has been chemically sterilized to the point of not being nutritious. I'm sure you've heard someone say that an apple from today doesn't hold a fraction of the nutritional benefits as an apple from our grandparent's time. It's true.

Our soil isn't the same, which means the food isn't the same, which means our guts and immune systems aren't the same. Then most people bring it all home and clean it with toxic chemicals to remove the toxic chemicals.

It doesn't even make sense!

There is definitely hope!

There are many solutions and ways to operate outside of this food system. We garden, hunt, keep backyard chickens and drink filtered water. Eating fermented foods like sourdough, sauerkraut, fermented pickles and drinking kombucha can also help to strengthen and feed our good gut bacteria.

We also get our hands dirty, literally, almost daily.

Exposure to microbes in the soil has been found to benefit our microbiome (all of the bacteria that determine our health). We have an heirloom apple tree that grows in our backyard. When we have the perfect winter, we are rewarded with the most delicious and sweet red apples! Most years are too harsh for a good harvest, but when it is abundant we love making applesauce, dehydrated slices, galettes, apple butter and pie filling for later!

Food is my passion

Any recipe I create from scratch, I try to make it as delicious as possible. As you browse through my recipes, remember that moderation can be synonymous with sanity. We don't have to eat perfectly one hundred percent of the time, but what is the harm in trying to do it as much as possible? Then when we grab a dozen donuts, our body has a fighting change to detox the sugar and fats properly instead of storing them.

Looking for something simple and versatile to begin with? I recommend the sourdough focaccia bread. It can be used to make the most delicious sandwich buns for a melty, gooey turkey and cheese broiled sandwich. Just add a few slices of meat and cheese, broil it in the oven until it's bubble and then add sauerkraut or mayo. Easiest lunch ever. Healthy? Nope. Not really, but it could be worse. It's still nutritious food from scratch that will please just about anyone!
