1. Chocolate Chip Sourdough Discard Pancakes
If you have a little bit of a sweet tooth in the morning, try adding ½-3/4 cup of milk chocolate or semi-sweet chocolate chips to your pancake batter. For best results, gently fold the chocolate chips into the batter once the batter is mixed. Double the chocolate by adding ⅓ cup of cocoa powder to the batter to take'em to the next level!
A word of caution, though: Be careful to not over mix the batter! Cook the pancakes as directed, until they are golden brown and fluffy pancakes.
2. Strawberry Sourdough Discard Pancakes
You can make a strawberry pancake a couple of different ways. Option #1 is to add 1 cup of finely chopped strawberries to your pancake better. Fold it in gently once the batter is made and then make the pancakes as normal.
Option #2 is to slice the strawberries and place them on top of a plain pancake and then drizzle with syrup and top with whipped cream. Both ways are so delicious!
This is a little extra, but I like making a strawberry syrup to drizzle on top. Bring 1 cup of chopped strawberries and ¼ cup of sugar to a gentle simmer in a sauce pan. Use a potato masher to smash the berries into a sauce. Let it cool (strain if desired) and pour it over the pancakes!
3. Maple Pumpkin Sourdough Discard Pancakes
Fall is officially here and you are on that pumpkin kick! Now is the time for you to make some delicious pumpkin pancakes. You will replace the sugar in the recipe with maple syrup and decrease the milk amount to ¾ cup, then add 1 teaspoon cinnamon, ½ teaspoon ginger, ¼ teaspoon nutmeg, ⅛ teaspoon cloves and ½ cup pumpkin puree. Mix until well combined and cook as directed.
4. Cranberry Orange Sourdough Discard Pancakes
Cranberry Orange sourdough pancakes are great for around the holiday season. If you want a simple breakfast to make when you have some guests staying during the holiday season, this is a good variation for you.
Mix in ¾ cup if dried cranberries or fresh, finely chopped cranberries and 1 tablespoon of orange zest to the pancake batter and then cook as instructed in the original recipe. Hint: just use the zest of one orange, the measurement really doesn't need to be precise for this.
5. Honey Oat Sourdough Discard Pancakes
For a honey oat pancake batter, you will want to replace the sugar with equal amounts of honey and then add 1 cup of quick oats, ¼ cup at a time. If the batter of the pancakes seems to be getting to thick, stop adding the oats and add some more milk.
You batter will naturally thicken over time as you are cooking each griddle of pancakes. I love making these for my kiddos, and I usually add an extra egg or two to the pancake batter for added protein.
6. Blueberry Sourdough Discard Pancakes
Blueberry pancakes are traditional, if you ask me. To make the sourdough version you will add ¾ cup of fresh berries or frozen blueberries to the batter and cook the pancakes as directed.
7. Sourdough Discard Pancake Breakfast Sandwich
A pancake sandwich is made by simply taking 2 warmed, fully cooked pancakes and placing a hot egg with cheese and maple sausage in between them! These are so delicious and one of our favorite ways to enjoy the traditional sourdough pancake.
Make a double batch and freeze the extras for grab-and-go breakfasts on busy mornings!
8. Peanut Butter and Jelly Sourdough Discard Pancakes
Oh man, I'm excited to tell you about these! Do you want to add a little bit of protein to your breakfast? Mix in ½-1 cup of peanut butter into the batter of your pancakes. Add a cup of batter to a medium heat skillet and swirl some jelly into the batter quickly before it cooks. These are such a unique twist to the normal pancake.
9. Banana Sourdough Discard Pancakes
Banana sourdough pancake recipe is made by adding 1 or 2 mashed or diced bananas to the batter and then proceeding to cook the pancakes as instructed. Once cooked, top with maple syrup and whipped cream.
10. Buttermilk Sourdough Discard Pancakes
These are probably the easiest "change" to the original recipe. You simply will replace the milk with buttermilk. This is something that you can do for any baked good recipe that calls for milk. The cultured buttermilk acts as a leavening agent and creates a fluffier, lighter and more airy pancake. Doesn't sound half bad, does it?

11. Maple Bacon Sourdough Discard Pancakes
Maple Bacon Pancakes are oh so delicious! All you need is to replace the sugar in the recipe with maple syrup and then once the batter is mixed, fold bacon bit crumbles into the prepared batter. Cook as instructed and enjoy!
12. Bacon Strip Sourdough Discard Pancakes
Bacon strip pancakes are a go-to pancake for when we are in a hurry in the morning. I suggest making them ahead, this way they are easy to reheat, making them a quick "grab-n-go" breakfast. You can use any kind of bacon you would like for this recipe.
Fry up the bacon as you normally would. Once all your bacon is cooked. You will lay slices of bacon onto your hot griddle and then cover each slice with pancake batter. Proceed to cook the pancakes as instructed and enjoy!
14. Nutella Sourdough Discard Pancakes
I am not sure about your kids, but one of my kids is obsessed with Nutella. So, instead of letting him spread Nutella all over the top of his pancake, I will actually swirl it into the batter. This way I can control the amount he eats. I just know he'd eat the entire jar of Nutella in one sitting if I let him.
14. Strawberry Banana Sourdough Discard Pancakes
Strawberry Banana Pancakes are a great way to incorporate fruit into yours families breakfast. You can choose to make these a few different ways. You can mash up 1 or 2 bananas and 1 cup of finely diced strawberries and add it to the batter and then cook the pancakes as instructed until gold brown.
The second way is to mash up the bananas and mix them into the batter, then cook the pancakes as instructed. Once the pancakes are cooked you can top them with sliced strawberries and any other topping of your choice.
Lastly you can top the original pancake with both the sliced bananas and the sliced strawberries. My favorite way to make them is the first option. They result in fruit filled pancakes that have just enough sweet to make them savory tasting!
15. Fully Fermented Sourdough Discard Pancakes
Do you love the taste of the traditional sour taste of sourdough bread? Well, I would like you to know that you can get that same tangy flavor in these easy sourdough discard pancake recipes.
All you have to do is let the mixed batter rest in the fridge for 24 hours prior to making them. This should be reassuring that if you ever run out of time to make all your pancake batter, you can put the rest of the batter in the fridge and make the rest of them the next morning. Just remix the batter before cooking them.
How to Store Sourdough Discard Pancakes
You can always save your leftover pancakes by placing them in a air tight container or Ziplock bag and placing them in the fridge. They will last for a couple of days in the fridge.
How to Reheat Sourdough Discard Pancakes
The best way to reheat these delicious pancakes is to place them on a parchment paper lined baking sheet and cover them with foil. Place the pancaked filled sheet in a preheated 350 degree F oven and bake for 10-15 minutes until warm. You can also place the chilled pancakes in toaster for 1-2 minutes or until heated through.
How to Make Ahead and Freeze Sourdough Discard Pancake Recipes
The good news is that if you would like to make the pancakes in a big batch and freeze them for an easy breakfast in the future you will place them on lined baking sheet in a single layer and freezing them until they are almost completely frozen, then place them an airtight container in the freezer. Flash freezing them in advance, make it so that they will not stick together in the freezer and are easier for you separate without thawing.
