Homemade Pancake Mix (Easy Pantry Recipe)

Skip boxed mix and make this homemade pancake mix instead. Easy, make-ahead, and perfect for fast, fluffy pancakes or weekend waffles.

Equipment

  • large mixing bowl
  • measuring cups and spoons
  • whisk
  • griddle or skillet
  • 3 quart mason jars or other airtight storage container

Ingredients
  

  • cups all-purpose flour
  • 3 tablespoons baking powder
  • 1 tablespoon baking soda
  • 2 teaspoons salt
  • cup organic cane sugar

Instructions
 

  1. Add all dry ingredients to a large bowl.
  2. Whisk thoroughly, really take a minute here so the leavening is evenly distributed.
  3. Transfer to a glass jar or other air-tight container.
  4. Label it and store it in a cool, dry place. I also write the instructions on the container for adding the remaining ingredients to make pancakes or waffles.

How to Make Pancakes from the Mix
Ingredients
  • 2½ cups homemade pancake mix
  • 2 large eggs
  • 1¾ cups milk
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract (here's how to make homemade vanilla extract)
Instructions
  1. In a medium bowl, whisk together eggs, milk, melted butter, and vanilla.
  2. Add the pancake mix and gently stir until just combined. The batter should be thick and slightly lumpy. Don't overmix!
  3. Heat a skillet or griddle over medium-low heat and lightly grease.
  4. Pour approximately ¼ cup of batter per pancake.
  5. Cook until bubbles form on the surface and the edges look set, then flip.
  6. Cook another 1-2 minutes until golden brown.
  7. Serve warm with butter, syrup, or fresh fruit.
How to Make Waffles from the Mix
Ingredients
  • 2½ cups homemade pancake mix
  • 2 large eggs
  • scant 1¾ cups milk, closer to 1½ cups
  • 4 tablespoons melted butter
  • 1 teaspoon vanilla extract (here's how to make homemade vanilla extract)
Instructions
  1. Preheat your waffle iron.
  2. Prepare the batter as written above.
  3. Grease the waffle iron well.
  4. Add batter according to your waffle maker’s size.
  5. Cook until golden and crisp.
Substitutions & Variations
 
  • Milk: Whole milk, raw milk, buttermilk, or diluted cream all work
  • Fat: Butter, bacon grease, coconut oil, or avocado oil
  • Flavor boost: Add cinnamon, lemon zest, or a splash of almond extract
