Made with garden fresh ingredients
In a small bowl, whisk together the olive oil, lemon juice, and red wine vinegar.
In a large mixing bowl, combine the diced tomatoes, sliced cucumber, and thinly sliced red onion.
Pour the dressing over the tomato, cucumber, and onion mixture. Gently stir to combine. Add the crumbled feta cheese and gently toss again. Season with salt, Pepper and fresh herbs.
Store this salad in a half gallon mason jar. If you are making it ahead of time, instead of tossing the ingredients together, layer them in the jar with the dressing on the bottom, followed by the cucumbers, olives, red onion, tomatoes, feta and seasonings.
